Pouilly Fumé comes from the Loire Valley in France and is made from Sauvignon Blanc grapes. The soil in the Loire Valley is a mixture of limestone, sand and chalk known as “tufa.”

Pouilly Fumé wine is grown on the eastern slopes of the Loire Valley. The cool climate here allows the grapes to ripen slowly which balances the sugar and the acidity very well. Pouilly Fumé is produced from 100% Sauvignon Blanc grapes, the soil that the grapes are grown in gives the wine a gunflinty and smoky aromas, hence the name “fume”, which is the French word meaning smoked. The wine can be described as a dry white wine with high levels of acidity and predominant aromas of gooseberries and grass (as well as other notes depending on the exact wine.)

As Pouilly Fumé is high in acidity, it pairs really well with salty dishes including seafood, cheese, especially those cheese that are made from goat’s milk, “chèvre.” Green salads made with vinaigrette dressings.
